These chocolate coconut bars are the ultimate vegan indulgence. With no baking involved they are really simple to make, and taste amazing. What really makes these coconut bars stand out is their Soft fondant center, with a melt in the mouth chocolate coating.

The Recipe:

  • 75g Coconut Cream
  • 2 tbsp Maple Syrup
  • Powdered Sugar (for a sweeter option)
  • 1/4 tsp Cornflour (for a refined sugar free option) 
  • 2 tbsp Unsweetend Cocoa-powder 
  • 50 ml Coconut oil (melted) 


In a bowl place your coconut cream.
Add 200ml Boiled water to a saucepan and simmer.
Place your bowl with the coconut cream, above the water to melt it, constantly stiring the cream until fully melted.
To your mix add the powdered sugar and maple syrup and whist until combined and thick.
(If you are using cornflour add a tbsp of water to it to form a paste and then add this to your coconut cream to help it to set.) 
Place in the fridge to set for 1 hr.
Remove from the fridge, and take tea spoon amounts of mixture rolling between your palms into balls. 

To make the chocolate coating:

 Melt the coconut oil in a bowl either by the method mentioned above or by placing in a microwave until melted for 20 second intervals. 
Stir the melted oil into your cocoa powder and add a tbsp of maple syrup to sweeten if you like. 
Pour chocolate mix over the balls of coconut until completely covered, and place in fridge to set for 30 minutes! 

Take out and Enjoy!
