Double Chocolate Orange Cookies with a Soft Fondant Center

I created this blog to share how incredible healthy, plant based food can taste and look. As you will already know if you read my LIVIAS KITCHEN MILLIONAIRE BITES REVIEW,
 I'm a huge chocolate orange fan; and this recipe combines both of these incredible flavours in the ultimate healthy cookie! 

 Its an exotic mix of orange and coconut, encased in a smooth chocolate coating, completed with a chewy chickpea cookie base & trust me you cant taste the chickpeas at all. They just add loads of protein and fiber, whilst creating the ultimate cookie texture.

Time:15 minutes baking plus cooling time. Makes 12. 

What You Will Need:

1 can Chickpeas
25g Almond Butter 
15g Dried Mango Chuncks
15g Dried Pineapple Chuncks 
25g cocoa powder (use cacao for an unrefined alternative)
orange extract
2tbsp agave 

For The Coconut Cream:

Coconut Cream
Cocoa Powder

For the Dark Chocolate Topping:

100g Vegan Dark chocolate 
(The darker the greater the health benefit, feel free to use vegan milk chocolate if you prefer!) 


  1. Turn your oven onto 180c to pre heat.
  2. Add all your cookie ingredients into a food processor and blend until completely combined. If you dont have a food processor you can use a blender or liquidizer to cream the chickpeas, and then mix in the remaining ingredients. 
  3. Roll out your dough onto a floured surface. 
  4. Cut out shapes using a cookie cutter.
  5. Place on baking paper lined tray and bake for 15 minutes.
  6. Whilst the cookies bake, add your coconut cream, agave and cocoa powder to a bowl. 
  7. Whisk until smooth and combined.
  8. Next make the chocolate topping by chopping up your dark chocolate into small pieces. Add to a microwavable bowl and place in microwave. Keep checking every 20 seconds, and mixing, until all the lumps have gone.
  9. Remove your cookies from the oven and allow to cool.
  10. Add a layer of fondant by smoothing over a teaspoon of coconut cream fondant to the cookie.
  11. Place in the fridge for 5 minutes to set.
  12. Finish by drizzling over your melted chocolate.
  13. Place in the fridge for a further 20 minutes to let the chocolate set.
